Slow Cooker Brisket with Haskap BBQ sauce

Ingredients
Slow Cooker: 

3 pound brisket 

1 cup water 

3 cups bbq sauce 

1 red onion 


Spice Rub: 

2 tbsp smoked paprika 

2 tsp chili powder 

2 tsp cayenne powder 

1 tbsp salt 

2 tbsp dried thyme 

1 tbsp garlic powder 

1 cup brown sugar 


BBQ Sauce: 

3 cups haskaps 

1 cup honey 

4 cups brown sugar 

796ml (one can) tomato sauce 

2 tbsp soy sauce 

2 tbsp worcestershire sauce

4 tbsp spice rub

Directions

  1. Preheat the oven to 400°F.

  2. Prepare the spice rub by thoroughly mixing all the ingredients.

  3. Trim excess fat from the brisket and pat it dry.

  4. Set aside 4 tbsp of the spice rub.

  5. Pat the brisket with the spice rub and sear it in the preheated oven for 30 minutes.

  6. While the brisket is searing, make the BBQ sauce: combine all sauce ingredients in a large pot, bring to a boil for 10 minutes, then simmer for an additional 30 minutes. Blend the sauce until smooth.

  7. In the slow cooker, add 2 cups of BBQ sauce and 1 cup of water to the bottom.

  8. Cut onions small and add them to the slow cooker.

  9. Place the seared brisket in the slow cooker and top with 1 cup of BBQ sauce.

  10. Cook on high for 8-10 hours.

  11. Serve with the remaining BBQ sauce.
