Haskap Lime Tom Collins Cocktail

I like to think of Tom Collins as a grown up lemonade.

Citrusy, fizzy and incredibly refreshing so long as you’re sitting down!

Traditionally, the notes from the gin really add a lovely touch of herbal to the drink without being overpowering, and in this haskap infused version, it works brilliantly against the complexity that the berries add.

If you like a good “Bees Knees” cocktail (which I also love making with a splash of haskcap juice), then Tom Collins may be your new best friend on hot summer days as they share some similar notes of lemon.

Makes: Roughly 1 cup

 

Ingredients

Ice

Perrier

½ oz haskap simple syrup

1 ½ oz Lemonade

½ oz haskap juice

2oz Gin - I love Ungava from Quebec (featured in the photos) but Old Fort Distillery makes a great one called Boreal which also has haskaps in it!

Garnish with frozen haskap & rosemary

Directions

If you like your drinks shaken:

  1.  Fill a cocktail shaker with ice. Pour in the gin, lemonade, haskap juice and simple syrup. Shake for 20 to 30 seconds, until the outside of the shaker is really cold.

  2. Rub the rosemary gentily on the edge of your glass. 

  3. Fill your glass with ice then strain the shaker into the glass and fill the rest of the way with perrier before garnishing.

If you don’t have a shaker, don’t sweat it.

  1. Pour the gin, lemonade, haskap juice and symple syrup into the bottom of your glass. Give it a stir.

  2. Rub the rosemary gentily on the edge of your glass.

  3. Top with ice then fill with perrier. Then garnish with rosemary and haskaps before serving.
