EASY HASKAP FRUIT OVERNIGHT OATS

We all love delicious food, but we all love it easy. But those two words rarely go together without compromising either your health, or the flavour. Being an on the go twin mom, I wanted something that followed a KISS method (keep it simple, silly!), that I could set- and-forget. This easy breakfast or brunch is healthy, full of flavour and packed with everything to keep your body going! Plus its kid approved! -Chef In The Nude

Makes:

Jar with haskaps and oats

4 servings

Kitchen Equipment:

Measuring cup, measuring spoons, air tight jar or container, mixing spoon.


Ingredients:

  • 1 cup Milk of your choice (almond, soy, coconut, etc), or water.

  • 1 cup rolled oats, or steel cut oats

  • 2 tbsp chia seed

  • 4 tbsp greek yogurt *optional

  • Sweetener of choice *to taste

  • Haskap berries *Fresh or frozen

  • 1 tbsp honey

  • 1 tbsp coconut *Optional

  • Additional toppings of your choice (Apple, banana, maple syrup, cocoa powder, or

    mango are great options)



Instructions:

  1. Add One Cup of oats to One cup of liquid of choice. Add in coconut, chia seeds, and

    yogurt. Mix it until the only lumps left are from the chia and oats. Close the container and

    set it in the fridge overnight.

  2. When you are ready to eat, add your choice of toppings along with the Haskap berries

    and let it sit for a few minutes. Add to a bowl or just dig in!

This tastes like what we want healthy food to taste like. It has the sweetness we all love of instant oatmeal, but with the benefits of food that can heal you from the inside out. We enjoy this easy breakfast as a family over some laughs and of course, some coffee.

This can be doubled, and kept for up to a few days. Just make sure to add fresh toppings!

I started Chef In the nude in hopes to demystify cooking for those on the go. I believe in using local organic ingredients that are as fresh as possible, but I understand that sometimes we have to bite the bullet and use what we can. It doesn’t matter what route you take, as long as you are nourished.
