HASKAP JAM & BRIE BRUSCHETTA

Haskap Jam & Brie Bruschetta being garnished

Ingredients:

  • 1/2 cup Preserved YYC HASKAP JAM

  • 1 small round of brie cheese, rind on - about 1 cup

  • 12 slices of a baguette (white sourdough works best)

  • 1/4 cup olive oil

  • Pea sprouts for garnish

  • Sea salt & freshly ground pepper



Instructions:

Assembling Haskap Jam & Brie Bruschetta
  1. Preheat oven to 450º F. Lightly brush both sides of each baguette slice with olive oil.

  2. Toast both sides until lightly browned. Don't let them burn!

  3. While the baguette is toasting, cut the Brie into 12 slices, each about 1/4" (6mm).

  4. While hot, layer each baguette with one slice of brie, spread with 1 tablespoon of haskap jam, lightly sprinkled with sea salt & freshly ground pepper. Finish with a few pea sprouts for garnish.

BEFORE BUYING THE FRUIT TO MAKE THEIR HASKAP JAM, THEY MADE THE TRIP TO ROSY FARMS TO TALK TO THE OWNER,ANDREW, IN ORDER TO ENSURE HIS ORCHARD AND BERRIES FIT IN WITH THEIR "LOCAL PRODUCERS" VISION. WE WERE SUCCESSFUL! OUR RELATIONSHIP CONTINUES TO GROW.

About the photos:

The branding photo shoot was booked for April, 2020. Due to the Covid lockdown, things had to be done differently. The photographer was nice enough to lend Vanessa a camera and showed her how to use it during a Facetime meeting. Due to the extra time she had during the lockdown, she literally made the bread and grew the pea shoots before the photo shoot for this recipe.
