HASKAP BERRY NO-BAKE CHEESECAKE

Just a quick simmer of haskap berries gives these no-bake cheesecakes all the flavour you need! Layered between a lemon mascarpone cheese mixture and graham cracker crumbs, enjoy this dessert by the spoonful in the sweet summertime.

Makes:
2 large or 4 small cheesecakes
Kitchen Equipment:
Small pot or pan, 2 small mixing bowls, glasses for serving
Ingredients:
1 cup haskap berries
2 tbsp sugar
½ tsp flour
1 tbsp water
10 graham crackers
2 tbsp butter
1 tbsp sugar
1 cup mascarpone cheese
2 tbsp milk or whipping cream
1 tsp lemon zest
1 1/2 tablespoon icing sugar
Instructions:
In a small pot or pan, heat haskaps with sugar, flour and water over medium heat until bubbling. Turn to medium-low (still simmering) and cook for 5 minutes until slightly thickened.
In a small bowl, crush graham crackers into small pieces and then add butter and sugar. Stir together and set aside.
In one more bowl, stir together mascarpone cheese with milk, sugar and lemon zest until well combined.
To make each cheesecake, layer how you see fit between 2 large cups or 4 smaller cups. Or, use this as guidance: Start by layering graham cracker crumbs followed by: mascarpone cheese mixture, haskap berries, more graham cracker crumbs, mascarpone cheese mixture, haskap berries and topped with more graham crumbs if desired.
