ROASTED HASKAP BERRY CROSTINI

An easy summer appetizer or snack, roasted haskaps bring all the flavour to this crostini! The best part is you can make all of the elements ahead of time and then assemble right before enjoying

Makes:

12 crostini

Kitchen Equipment:

small baking dish, sheet pan



Ingredients:

  • 1 cup haskap berries

  • 1 tbsp olive oil

  • 1 tbsp honey

  • 1 tbsp lemon juice

  • ¾ cup ricotta cheese

  • Pinch salt

  • 1 tbsp honey

  • 12 slices of a baguette

  • Extra olive oil

  • Mint or basil for garnish

Instructions:

  1. Preheat the oven to 450F. Brush baguette slices with a little olive oil and toast for 5 minutes.

  2. While the baguette is toasting, in the small baking dish mix together haskaps with olive oil, honey and lemon juice.

  3. Remove the baguette from the oven after 5 minutes and set aside.

  4. Turn the oven heat down to 400F and put in the baking dish with the haskaps immediately. Roast for 20 minutes, stirring halfway through.

  5. In a small bowl mix together the ricotta, pinch of salt and honey.

  6. Before assembling the crostini, make sure the roasted haskap berries cool down to room temperature.

  7. To assemble the crostini, spread the ricotta mixture over all of the baguette slices. Then, divide the roasted haskap berries on top of the ricotta and top with sliced fresh mint or basil.
