Haskap Simple Syrup, An Unsung Summer Hero

A burst of brightness and fruitiness added to all manner of summer delights.

Fruit-infused simple syrup is an ingredient that is more versatile than it gets credit for, and it is so simple to make. It stores for a good amount of time, so if you want to make a good batch and keep it in the fridge you absolutely can.

Here are some of my favorite ways to use this unsung kitchen hero:

  1. Add a splash to some bubbly water to get a fruity fresh kick.

  2. Sweeten some homemade iced tea, cold herbal tea, kombucha or lemonade.

  3. Brush it onto a plain cake or muffins to give them extra moisture and flavor.

  4. Drizzle it over fruit salad along with some fresh herbs, a squeeze of lemon, and a sprinkle of salt for the best fruit salad you’ve ever had!

Makes: Roughly 1 cup

 

Ingredients

1 cup Haskap Juice*
1 cup Granulated SugarHalf a lemon, juiced
* Or 1 cup of water and 8 oz of haskaps

Directions

  1. In a small skillet, heat the berries, sugar, and lemon juice over medium-high heat.

  2. Lower the heat when it starts to boil. Let it simmer for about 5 minutes until the haskaps have melted.

  3. Take it off the heat and let it cool for at least 15 minutes.

  4. Pass the liquid through a strainer and store it in the refrigerator in a sealed container.
