Finnish Haskap Pie

This pie is different from all other berry pies because the crust is more like a focaccia or pizza dough, which makes it extra delicious!

The traditional Finish pie was made with blueberries (or bilberries), but when I tried haskaps for the first time, the first think I wanted to make was a pie with my grandmothers old traditional recipe. This took me back to my childhood summer memories.

ESTIMATED TIME:

Prep Time: 75 min Make time: 40 min

Kitchen Equipment:

Mixer, bowls, 12”x8” pan

Ingredients:

  • 1 cup warm milk (dairy free alternatives work well too)

  • 1/4 oz or 2.25 tsp active dry yeast

  • 1/2 tsp salt

  • 1 cup white sugar

  • 1 large egg

  • 3 cups all purpose flour

  • 1/2 cup melted butter (plus a bit more for greasing the bowl)

  • 4 cups haskaps, fresh or frozen

  • 1 cup almond flour

Instructions:

  1. Mix the yeast with warm milk in the bowl of a mixer.

  2. Add half the sugar, salt egg and half of the all purpose flour. Mix on low speed.

  3. Add melted butter and remaining all purpose flour. Mix until the dough is smooth and sticky.

  4. Place the dough in a greased bowl, cover and let rise in a warm place until doubled in size.

  5. Preheat oven to 350F.

  6. Mix berries with almond flour and remaining sugar.

  7. Line a 12”x8” pan with parchment paper and press the dough evenly into the pan with floured hands. Pinch a ridge all around the edges.

  8. Spread berry mixture evenly over the dough.

  9. Bake for approximately 40 minutes or until the crust is golden brown.

Best served with vanilla sauce or ice cream.
