Haskap Morning Bread

 
 

Better than banana bread - a delicious, yet healthy choice for your cozy breakfast moments.

Kitchen Equipment: 8x4 loaf pan Makes: One Loaf

 

Ingredients

2 eggs

2 bananas

2 tbsp cinnamon

1 tsp cardamom

1tsp nutmeg

2 tsp liquid vanilla

pinch of salt

1tsp baking powder

1⁄2 cup maple syrup

2 cups of oats

1⁄2 cup milk of your choice

1 cup of haskaps fresh or frozen

a handful of pecans

Directions

1.Preheat oven to 375°F.

2.Take a bread pan and spray it with cooking oil or butter.

3. Mix all dry ingredients well together with a spatula.

4. Add vanilla, milk and maple syrup and mix well.

5. Add haskaps, crush your pecans and add them in.

6. Pour the pattern into the bread pan, you can place some pecans on top

as well.

7. Place into the oven for approximately 50-60 minutes, or until not soft

when testing in the middle.

8. Let the bread settle for 10 minutes before serving.

 

I came up with this recipe while trying to come up with some new ideas for an easy, yet healthy breakfast for our family. I love having oats in the morning, but plain oatmeal was getting boring. It also happens to be the holiday season so I decided to add some holiday spices into the loaf and that ended up going so well together with the fresh taste of haskaps.
